A quick egg salad recipe for those busy days. Great on its own or in a lettuce wrap.
Makes 2 servings, Nutrition info per serving : 280 calories, 25g Fat, 12g Protein, 1g Carb 81% FAT / 18% PROTEIN / 1% CARBS
- 4 hard-boiled eggs, chopped
- 3 tbsp mayonnaise
- 2 tbsp minced onion
- 2 tbsp dill relish
- 1 tbsp prepared mustard
- Salt and pepper to taste
- Combine all ingredients into a medium bowl, stir to combine.
- Serve in lettuce wraps or as is.
