Parmesan Chicken Marinara Bake

Makes 4 servings, Nutrition Info Per Serving: 654 calories, 4g net carbs, 32g fat, 82g protein


  • 2 lb cooked chicken breast, cut into 1″ chunks
  • 1 1/2 cups Raos Marinara Sauce
  • 2 oz plain pork rinds, crushed (weight is before crushing them)
  • 4 oz. shredded mozzarella
  • 2 tbsp grated parmesan
  • 2 tbsp butter, melted


  • Pre-heat oven to 375 degrees F
  • In a bowl combine cooked chicken and the marinara, stir well to coat the chicken
  • Transfer chicken mixture to a 2 quart casserole dish, top with the mozzarella cheese
  • In a separate bowl combine the melted butter and pork rind crumbs, stir until well combined
  • Sprinkle the crumbs over the top of the mozzarella, top with the grated parmesan
  • Bake for 25 minutes, or until heated through and top starts to brown
