
Makes 4 servings, Nutrition Info Per Serving: 654 calories, 4g net carbs, 32g fat, 82g protein
Ingredients:
- 2 lb cooked chicken breast, cut into 1″ chunks
- 1 1/2 cups Raos Marinara Sauce
- 2 oz plain pork rinds, crushed (weight is before crushing them)
- 4 oz. shredded mozzarella
- 2 tbsp grated parmesan
- 2 tbsp butter, melted
Directions:
- Pre-heat oven to 375 degrees F
- In a bowl combine cooked chicken and the marinara, stir well to coat the chicken
- Transfer chicken mixture to a 2 quart casserole dish, top with the mozzarella cheese
- In a separate bowl combine the melted butter and pork rind crumbs, stir until well combined
- Sprinkle the crumbs over the top of the mozzarella, top with the grated parmesan
- Bake for 25 minutes, or until heated through and top starts to brown
