Creamy vanilla pudding, I like to eat this for breakfast, 90% fat keeps me satisfied all morning long.
- 2 cups heavy cream
- 4 egg yolks
- 1 tsp vanilla
- 3 tbsp powdered Swerve
- 1 tsp cinnamon, optional

- Heat cream in a saucepan over low-medium heat. Whisk in one egg yolk at a time. Increase heat to medium and add vanilla and whisk until it starts to thicken up. Remove from heat and allow to cool for 15 minutes, once cooled whisk in the Swerve, adding more until desired sweetness if needed. Refrigerate, it will thicken up to pudding consistency once completely cooled.
- I like to sprinkle with cinnamon, but it is decadent on its own.
