
Fast and easy low carb Raspberry Fool, a fool can be made with any soft, ripe fruit. Try it with strawberries next time!
Ingredients:
- 3 cups raspberries
- 1/2 cup Swerve confectioners’ sugar
- 1 cup heavy cream
Makes 4 servings, Nutrition Info Per Serving: 248 calories, 21g fat, 1g protein, 9g net carbs 82% FAT / 2% PROTEIN / 16% CARBS
Directions:
- Puree one cup of the raspberries in a blender. Force the puree through a sieve to remove the seeds. Add 1/4 cup of the Swerve and mix well.
- Remove 1 tbsp of Swerve from the remaining 1/4 cup and toss the remaining berries (saving a few for garnish) with the remaining Swerve.
- In a separate mixing bowl, beat the heavy cream and 1 tbsp Swerve until it holds soft peaks. Beat in the raspberry puree, then fold in the sugared berries. Garnish with raspberries, dark chocolate shavings, or sugar free chocolate chips if you prefer. Enjoy!
